Hand harvested and fermented in small, traditional open top vats. These vats are hand-plunged to extract colour and tannin, and after pressing the wine is aged in French oak barrels.
The structure is fine grained and elegant, with subtle power. Complex flavours of savoury, red fruits and potpourri. Pairs perfectly with game birds, pork, ham, lamb and venison and tomato, garlic or cream sauces. Duck breast with a Pumpkin Mash.
