80% Pinot Noir / 20% Chardonnay
This year was a beautiful warm, dry summer. This consistency proved a perfect growing season for us. We sacrificially cropped back much of our organic, high quality Pinot Noir and Chardonnay grapes before carefully handpicking at peak ripeness.
“I like my Sparkling dry and less acidic from riper fruit with fuller flavour and body to complement fine food. The grapes for the base wine are crushed and destemmed followed by a short cold maceration. Pressed, fermented and aged for 24 months in French Barriques on its fine lees. A secondary fermentation in the bottle continues with the “tirage” and extensive further ageing on its lees in the bottle with riddling and disgorging carried out using traditional French methods”
Cheeky rose-pink, sparkling with fine bubbles and a bold vibrancy with mellow acidity. This dry and crisp cuvée shows seductive aromas of ripe strawberries and raspberries, juicy blood oranges and zest of a pink grapefruit. Yet shows undertones of freshly baked brioche and vanilla. Impressive in its opulence, the finish is refined and refreshing.
